Angry Daily Menu Thread/Thursday, Jan 10

All right, I'll beg. Please please please please please post your menus. Copy and paste them from your Journals -- or write them here first and then copy and past them in your Journals. Think your menus are boring? Fantasize. Post your Fantasy Menu, or what you would eat if you had a personal chef, or unlimited time and money. Remember, Newbies Need Ideas. Be kind. Post your menus!

Thank you.

Personally, I'm on strike and won't post until there are ten menus up here. So get out there and eat, Active Low Carbers! And then tell us all about it

Default just started

Feeling like my day has just started even though it's noon already, but here goes.

b - flax-o-meal (butter pecan) w/ cream, 2 pk. splenda a dash of caramel s/f syrup and a tbl. of cream. (I so love this)
Snack - Melissa and I had Parmesan chips. She’s still eating hers and I’m thinkin' of snatching one more bite.
L - will be protein shake. Trying new ideas. Today will be w/ strong cold coffee & some scharffen Berger cacao nibs (thanks to Karen for the suggestions)
D - will be broccoli w/ garlic and ghee, flank steak (marinating in a little soy sauce & liquid smoke) a small green salad
Tonight the girls and I are going to go to the frozen yogurt place, so I will have a child size portion on carbolite frozen yogurt!
Regards,
Brenda

P.s. to answer yesterday’s inquiry - a taco salad is just that... what I posted on top of a bunch of lettuce. No chips or tortillas.

Default never a dummy question

( that's how i learned about them!!!

well, usually we have cheddar chips but i'm out of cheddar and made due. tomorrow i think i will do havarti.

anyway, i just spread about an ounce to two ounces of cheese on a microwave safe plate, put in microwave, cook for about 2 min. take out, and remove with a fork or spoon. i've found if i don't remove it quickly it sticks and i can only get at it by licking (not really, i tossed it, but the visual's pretty funny). my microwave is very slow, so adjust for yours. if it gets over cooked, it gets bitter. what you want is for the cheese to be melted and hard on the ends. it will harden in the middle as you let it rest.

good luck. these "chips" are great to use as chips for yummy dips
regards,
bren
p.s. the carb count would depend on the cheese. mine right now says no carbs, but it's probably a .3 or .7. (per oz.)

Okay, my own menus have been sad, so...if I could eat anything for one day here is what I would have.

Breakfast: 3 Hearty Thick Cut Bacon, and 3 eggs scrambled with a bit of salsa, cheese and spinach. 25 oz. water and supplements

Lunch: Large green salad with chicken chunks, bacon, tomato, pickles, cucumber, hard boiled egg, celery, a bit of onion, shredded mozerella cheese and italian dressing. 25 oz. water

Supper: 2 boiled lobsters with butter, broccoli with mozerella cheese melted on top, strawberries with cream on top, 25 oz. water.

(My real food has been cereal, steak, steak, pork, spinich....very sad, and about 1 liter of water so far.)

Breakfast ideas
- Frittata (zucchini makes an especially good frittata)
- Omelettes
- Crustless quiche
- Joe's special (a San Francisco classic scramble of ground beef, spinach, eggs, assorted seasonings)
- Cottage cheese
- Baked or shirred eggs (put an egg in a buttered ramekin with a tablespoon of cream, a generous pinch of Parmesan cheese, s + p, bake) (I'll post the time + temp later)
- Steak
- Hash (use leftover meat, cubed, and vegetables like yellow squash, turnips)
- Breakfast burritos with those low-carb tortillas (from La Tortilla Factory? The ones referred to in PP), eggs, bacon or chorizo, a small amount of salsa or hot sauce
- Eggs Benedict without the English muffin, ie - a poached egg on a slice of Canadian bacon topped with holladaise
- Sausage and eggs

Snack ideas
- Rolled-up pieces of ham or roast beef with cream cheese in the middle
- Beef jerky from the health food store that is only beef + salt
- Macadamia nuts (don't go overboard)
- Cheese (not too much)
- Leftover vegetables
- Leftover anything

Main dish ideas
- Quesadillas made from those low-carb tortillas, Monterey Jack cheese, shrimp or chicken, cilantro, and a small amout of salsa
- Curries, either Indian or Thai (Coconut milk is relatively low carb and this is a good way to use up leftover cooked meat. Add some vegetables too.)
- Green chili stew (sautee pork chunks, onion + garlic, add roasted, peeled Anaheim or poblano chilies and chicken broth, maybe a chopped, peeled tomato, let stew for an hour)
- Salad of mixed greens, cooked chicken or steak, avocado, tomato, bits of strong cheese such as Roquefort or Parmesan, tossed with a vinaigrette
- Filet mignon with Bearnaise sauce
- Fresh fish filets wrapped in thin slices of smoky bacon, roasted
- Coq au vin
- Bouillabaise (without the crouton but with the rouille)
- Crab served with drawn butter or a flavored mayonnaise
- Osso bucco
- Veal picatta (but don't dredge in flour, just season with s + p)
- Roast chicken (the easiest and most satisfying meal ever)
- Sauteed chicken breasts with beurre blanc
- Sashimi (but don't do this yourself - go out)
- Boeuf Bourginon or any other beef stew
- Interesting sausages, like chicken with spinach and feta
- Corned beef and cabbage
- Stir-fries of thinly sliced flank steak (briefly marinated with soy or oyster sauce), snow peas, assorted vegetables

I could keep going, but much of this is probably covered in the recipe section. Alto - is this what you meant, or were you looking for complete meal plans?

Allison

well, after this last post from Allison I feel embarrassed to post my boring meals . It's all in how you market it I guess.

B: Tastey morsels of ham cuddled together with swiss cheese, mayo and eggs, baked till golden brown

L: Pacific salmon au tin, basking on a bed of fresh baby spinach leaves, gently lathered with mayo. Accompanied by a fine cheese from the Kraft family.

D: Butterfly pork chops dressed in black and white (pepper and garlic), baked until moist, not dry. Zucchini circles bathed in olive oil and sprinkled with italian spices, baked to tender, and dressed up with coat of swiss cheese. Iced Strawberries, once fresh from the grocery, frozen, and enjoyed only partially thawed.

3 litres of l'eau

You know Alto, if you had left that comma out after the word eat, the menus would have been much more interesting!

Ok, my menus are always pretty boring but this is what I ate today:

12:15 PM Piece of Bronzed Chicken

2:45 PM String cheese, 10 slices of pepperoni

5:30 PM Grilled chicken salad (grilled chicken pieces, lettuce, bit of shredded cheese)

6:00 PM Cup of 12 oz coffee with 1 sweet-n-low and tsp of heavy cream

Talking It was a good day...

I enjoyed all of my meals today - I'm on induction again so I have a lot less veggies than normal.

Breakfast: 4 scrambled eggs mixed with ground chorizo covered with cheese and 2 strips of bacon. Diet Dr Pepper

Lunch: Szchwan stir fried string beans and lemon pepper shrimp with ice tea (2 entrees at a chinese restaurant)

Dinner: 2 chicken breasts stuffed with thyme, shallots and grainy dijon mustard and most of my daily water.

I'll post if I remember.

Fantasy Menu:

Breakfast:
2 Eggs Benedict
(sans muffin, of course!)

Lunch:
Lobster tails, drizzled with drawn butter.
Sliced bocconcini layered with basil leaves and tomato slices, covered in vinaigrette.

Afternoon snack:
Caviar with sour cream

Dinner(served on fine Royal Doulton on my finest damask table linen by my subservient footmen - under the watchful tutelage of the butler)
Hey this fantasy is getting better as it goes!
Okay, where was I, oh yes dinner:
Choice portion of roast goose
Roast zucchini slices
Side salad of butter lettuce and ripe tomato (freshly picked from my superb garden).
Cheese platter.
This fine dinner will be accompanied by the best available vintage of Dom Perignon champagne. (I'm fantasizing that Induction is over. )

Well, I'll just keep right on dreaming...
