Low Carb Pancakes

3 Eggs, separated
½ cup Sour Cream
1 Tablespoon Sugar Substitute
¼ cup almond flour
¼ teaspoon salt

Beat egg yolks. Add sour cream, sugar, flour, and salt. Fold in stiffly
beaten egg whites. Cook on griddle by small spoonfuls, browning both sides.

This recipe isn't mine, but I have modified it so it is amazing. I have
tried a number of lo-carb pancakes, cheese pancakes..and they just aren't
"cakey" enough. These are..and really filling.

Excellent Pancakes

4 large eggs (2.4)
2 T oil
2 T water
1/2 c soy protein isolate (depends on brand-generic is
4carbs, Supro is zero carbs)
1/2 t salt
1 t baking powder (between 2 and zero depending on brand)
4T heavy cream (2)

Put the soy protein in a bowl and add the water first....stir until it
forms a granular texture.
Add the oil and stir until it forms a granular texture (This is to prevent
major lumping which occurs if you throw everything into the bowl at once).
Add salt and baking powder..stir.
Lightly beat the eggs and then add them to the bowl.
Stir to get most of the lumps out.
Now add the heavy cream.
If you like a thin batter (I do) add another 4T of water.

Fry like regular pancakes. Makes about 18-20 (3" pancakes).

Carbs for entire recipe (10.4 - 4.4 depending on the brands you use)
either way..half to 3/4 of the recipe is filling enough.
