Default Dierdre's pancake recipe for syrup

You have to try the Pork Rind French Toast!! It's more like pancakes than
french toast and tastes amazing! My husband is now addicted to them. He
didn't believe me when I told him they were made with pork rinds.

Here's the recipe - I double it and use a whole bag of pork rinds, crush
them in the food processor or blender.


Pork Rind French Toast

1.5 oz. pork rinds (1/2 of a 3-oz. bag)
2 eggs
1/4 cup cream
2 packets sweetener (I use Splenda)
Cinnamon to taste (I use 1/2 tsp)

Pulverize the pork rinds. Mix the eggs, cream, sweetener and cinnamon
together. Stir in the pork rinds. Let sit for 5 minutes, until the
mixture
is thick and goopy. Spoon into a buttered skillet and fry on both sides.

Serve with butter and SF syrup.
