Question ? about lettuce and carbs!

Why does my bag say only 3 carbs per 1.5 cup? I thought the number was 5 per 1 cup? Mine even has some carrot in it!

Lettuce is VERY low carb.. romaine, for instance, has 1.3total carb per cup, and .95 fiber per cup. That leaves only .35 carb per cup of lettuce(romaine). Looseleaf lettuce has 1.96 total carbs, and 1.06 fiber, making it .90 carbs per cup. Lettuce(i'm assuming the head type) has 1.15 total carb, and .77 fiber, equaling .38 carbs per cup. Raw spinach, my fav, has 1.05 total, and .81 fiber, putting it at .24 carbs per cup... talk about being able to eat! And it's super nutritious.

Trust the package, subtract the fiber. Eat a BIG salad!

=)

Can you eat a dozen cups of lettuce at a time? No? Then I wouldn't worry about it

We also add chopped parsley to our salads. I love the flavor, and just 1/4 cup of it gives 33% of the RDA of vitamin C, 83 grams of potassium, 16% vitamin A, 6% folate and more for 1/2 net carb. Compare that to spinach (which is better than lettuce): 4% Vitamin C, 0.214 grams of potassium, 10% vitamin A, 4% folate, and of course practically 0 carbs.

Oops! I forgot iron! 1/4 Cup of spinach has 1% of RDA of iron. 1/4 Cup parsley has 5%. (I was told spinach was such a good source of iron all my life!)

I suppose thats probably because you can eat 3-4 cups of spinach in a salad but who is going to eat 3-4 cups of parsley?

If I put 1Tbsp of parsley in something its a lot for me.
Then again I dont care for the strong flavor of parsley and I love spinach!

Also, as far as Iron goes. The Iron from veggies isnt as good as the Heme Iron from meat.

Thanks for the info. I thought Salads were good only for the toppings (toms, cukes, nuts, etc) rather than for the lettuce.

Oh, that's true for iceberg, which has essentially no nutritional value, but the dark leafy greens are one of the best veggies around. I love all kinds, and even the stronger flavored ones can be tempered, like in a spring mix, or paired with a complimentary dressing . I like them all.
