Waxy Corn. ...Waxy corn is grown primarily for its higher amylopectin content compared to normal corn. Waxy corn starch is over 99 percent amylopectin; regular corn contains 72 to 76 percent amylopectin and 24-28 percent amylose...An estimated 30 percent of waxy corn is grown for livestock feed, since its starch can be digested more easily and more completely by livestock than dent corn starch. Some tests indicate that steers make greater gains when fed waxy endosperm corn.

Amylopectin and Amylose are the two main types of Starch. Amylose is low-glycemic, while Amylopectin is extremelly high glycemic. The Glycemic Index of a starchy food is usually determined by the ratio of these 2 starches. A food that is almost entirely Amylopectin, and which has virtually no Amylose, Fiber, Fat, or Protein will be extremelly high glycemic.
