It seems to be something you have a strong liking or dis-liking for. I buy Alaskan salmon because it does not have mercury like tuna does. We combine it with onion and low carb milk with seasoning. Eat the bones-they have the calcium you need. To me it is one of the best values for the nutrition. We like it in anyway we would use tuna.

you can eat the bones because they are very soft. i usually eat them while i am removing the skin. the grey bits are just the skin. if you find scales on them you might want to switch brands!

if you tip the salmon out of the tin, you can remove the bones and peel off the skin easily and quickly. you are then left with just the pink flesh that you can eat plain or mix it with other ingredients. i usually just put the flesh on some salad ingredients with some mayo for a quick nutritious breakfast.

You can find brands that are boneless, but as Idabelle suggested, consider eating them. I thought that sounded weird at first, too, but I can tolerate them now. You don't really notice them once the patties are cooked. I do remove the big chunky bones, but leave the little thin ones.

My patty recipe: 1 can salmon, 1 egg, 1/4 cup dry grated parmesan cheese. Fry and serve with creamed mushrooms.
