I live within walking distance of Granville Island, and there's a little sausage kiosk down there that sells sausage without any filler -- and boy howdy it's good.
Just keep asking at the little butcher shops in your town if they make their own sausage, and say you're avoiding cereal fillers.

I order mine from my local butcher, and I have control over the ingredients. They are pre-wrapped in package sizes that I want.

He just shows me the ingredients he would normally use, and I pick and choose what I don't want.

I think I have to order a specific quantity (is it 10 pounds?) at a time, but that is not a problem. Then I have them on hand, and I know what's in them.

All good butchers will do that for you Tracy. Even at the Fortinos near my house the butcher there accomidates me. I even buy a pigs leg there and do all my own sausages. Hubbies an ex butcher so that helps. I'm the chef, I do the seasonings then we grind it and make them ourselves.

Thanks Chefs, I actually found a sausage shop in town that has so many different varieties all with no filler. I wasn't looking beyond the grocery store!!!
