Default Anyone have an idea for eggplant?

i use eggplant all the time in different recipes, but when i try to cook it by itself it just does not seem to come out right. i slice it to about 1/4" and saute it with butter and onions in a skillet. How else can I prepare it?

hmmm ... sorry, haven't tried it warm.

You can always do a search for eggplant recipes. I know there are a few on this forum. Good luck in your search.

Eggplant dipped in egg and coated in parmesan adn then fried is delicious in eggplant parmesan. Or just plain eggplant fried and used as lasagna noodles in your favorite recipe is fantastic!

Etoiles beat me to the punch on eggplant dipped in egg, and coated in parmesan. I use a couple of tablespoons of butter to fry eggplant.

Try adding a bit of seasoning to the parmesan cheese to give it a flavor boost:

Tony Chacere's Creole Season
or Emeril's Essence
or Old Bay Seasoning
or (trust me on this one) a packet of Splenda.

The idea for the Splenda came from an Emeril Lagasse recipe for New Orleans style eggplant that I used to make: the seasoned eggplant is fried and then rolled in powdered sugar. Sounds bizarre but it was yummy stuff. Mixing Splenda with the parmesan is a very close approximation.

You can heat the slices over low heat after it's marinated. It's fab with lamb.

hi there,

You could try roasting it .. Roasted Eggplant with Red Peppers and Olives. This is great hot, and leftovers are good cold or reheated

I love eggplant ...

I never tried eggplant before, but I saw some at the farmer's market and thought I would give it a try. I LOVED the eggplant dipped in egg and parm. cheese. It was absolutely fabulous! I also tried grilling it with the marinated recipe, I just mixed all the ingredients together, dipped it in the mixture and grilled it. Let me tell ya.... it was disgusting! It was sooooo bitter, I couldn't even swallow the first bite. I salted and let them all sit the same amount of time. ( I used 1/2 of the same eggplant for each version) So I know it wasn't from not salting and draining it enough. IMO, stick with the parm and egg.
