I had a cheesecake slice the other day where they put caramel sauce and pine nuts on. It wasn't to bad at all.

I like the cheesecakes where you use sweetened sour cream as a top layer and it kind of forms it's own topping. Too much fruit or sauces just detract from the taste of the cheesecake and can over power it.

Maybe insteadof a topping, serve a nice white wine along side. I find it really enhances the taste of the cheesecake.

I'm with LadyBelle on berry toppings overwhelming the subtle taste of cheesecake.

Here's what I like:
2 cups sour cream, 1 tsp vanilla extract, 2 packets splenda. Awesome!

I have to admit. I enjoy berry topping on vanilla cheesecake. I drop a few strawberries, blueberries or rasberries in my food processer with 2 pkts splenda to make a berry sauce. But the wine sounds like a wonderful option.

For a mix in I used unsweetened carob chips once. If you aren't sensative to sugar alcohols you can use SF chocolate chips, or a chopped up SF chocolate bar. The SF chocolate could also be used to make a chocolate coating for the cheesecake.

When I make a cheesecake, I will usually make a blueberry sauce. Frozen blueberries, a bit of water, and guar gum to thicken, cooked in a saucepan until it's bubbling and thick. I don't have too much on mine, I prefer it plain too, but this way if I want a bit at least there's no extra carbs beyond the berries.
