Sounds like you work in industry - same as me.
I don't have much advice for you as far as meals, especially if you have read the book. There are some excellent recipes out there if you are into cooking. If not, you can always do like I do at lunch and eat a bunch of hot dogs with mustard and no buns!
I hear you about missing the carbs though! I'm a chips, fries, beer guy myself...
I have found the biggest problems I have are *not* meals, but snacks! Meals are pretty easy if you have meats, eggs and cheeses ready to cook up.
Snacks on the other hand, can take a lot of prep time. I like deviled eggs, and also make sugar-free fudge treats, but you have to make them in advance. Pork rinds that are hot and spicy aren't too bad however!
