hi sunnyz! I pack a lc lunch for my 15 yr old every day. Luckily she likes left overs cold so that is an option for me. I often pack a salad with added meat from last nights dinner like sliced chicken, crumbled hamburger, or taco meat.We also use the o'so lo rollz (I buy mine online at www.thebetterhealthstore.com) for sandwiches. Sandwiches might include mayo, deli turkey or sliced chicken left over from dinner, and lettuce. I pack celery or cucumber strips with a little tupper of no carb dressing for dipping. Some snack items could include nuts or homemade protein bar (to avoid the sugar alcohols). Chicken or tuna salad in a rollz sandwich or on top of a salad is another favorite. If you make the parmesan coated chicken nuggets for dinner, they make especially yummy left overs even cold. I also make rollups with turkey(any deli meat would do) spread with a bit of mayo and my daughters favorite cheese (feta) . Sometimes I throw in a surprise like 2 lc marshmellows, 3 strawberries, or a lc no bake cheese cake in a mini muffin paper.The other day I found little cheeses in jungle animal wrappers.You are correct that variety is the key to avoid boredom. You deserve a big pat on the back for all you are doing as well as the great job of sticking with it that she is doing!

Our 10 year old is in love with pepperoni chips. We buy the huge bag at BJs. I nuke about 15 - 20 slices on paper towels for 130 seconds to make them into chips. Nice crunch and they aren't greasy (the towels sure are!). Also great for dipping, make your own or even a small amount of store bought onion dip is OK carb wise. Kids still want to eat like kids.

Lunch could include a clemintine (12 carbs after fiber, 6 for a half) which should be fine if the rest of the food is LC (turkey or RB rollups with swiss, olives, some green peppers, cherry tomatoes.) A piece of SF candy is a great idea. Kids don't want their lunch to be too different.

A half sandwich (6 carbs with the Arnolds bread) may be a good option for your daughter. Sandwich with some soup is nice this time of year. There are some lower carb ones. I sure do hate cleaning the thermos though.

Someone mentioned SF jello packs once. Never looked for them but if they exist, they might give you something else to pack once in a while.

Lots of good ideas in this thread. I'm going to use some for my own lunch!
