My 8 yo DD is eating LC too. It's not for weight loss but more for behavior issues. She does eat more carbs than someone trying to loose. Some of the things I pack for her are:
Meat roll-ups (ham and swiss rolled with a little sour cream to help it stick or corned beef rolled with cream cheese and green onion in the middle)

Hard-boiled egg and either beef jerky or pepperoni slices
SF PBJ on LC bread
A bag of nuts instead of chips (there is a recipe I use for sweetened, buttered pecans cooking them up with butter, Splenda and cinnamon -- HUGE hit with the kids!).
SF Jell-O or some berries for a treat (she also does apples, pears, oranges and such but that's probably not ideal for weight loss).
Tuna or chicken salad -- either on LC bread or alone with a plastic spoon.
Veggies (celery, green pepper, carrots etc.) with a side of ranch dressing dip.
Cheese.
I do give her also SF yogurt with my own fruit added in and occasionally SF cookies but again, they are a little carby if weight loss is your goal. Yes, also check out the LC parents section-- I got most of my ideas there.
