Buttermilk is milk with a bacterial culture similar to yogurt. It tastes quite a bit like yogurt, but not as tart, and of course it isn't as thick. I absolutely hate drinking milk, but I really like buttermilk. I gave it up when I started LCing, though. What's the carb count?

Cultured buttermilk tastes a lot like cottage cheese to me, but with a little more zing. I love the stuff (especially with salt and pepper). I haven't had it since starting Atkins, but it may be a decent maintenance food, used in moderation.

It is a little carbier than milk: one cup has 12.99 grams of carbs, 10 grams of protein, and 441 mg of potassium.

Uncultured buttermilk, the kind you get if you make cream into butter, doesn't have much flavor at all.

It's definitely an acquired taste, el corazon...most people cook with it, but those who drink it generally either love it or hate it...not too much middle ground.

First you feel the every thick and creamy texture, then the bitterness where you were expecting some kind of sweet. Then after you swallow the biterness satys and is added with a ever so slight taste of "butter".. I agree with the one poster it does at this point taste like cottage cheese.... Discription brough to you by.. a southern breed belle ;- )

I tried it years ago and was disgusted. However I also used to be disgusted by plain yogurt and a few other things. As much as my tastebuds have reset on this WOE and are no longer in sweet mode, I may have to give it a try.

With the new LC milk though and what great yogurt it makes, I don't know if I want to bother
