Exclamation Happy Holidays, and a friendly warning !

Hello all -

I know these times of the year are especially tough for us LCers (Pecan Pie is my personal Achilles Heel), but hang in there, and I'm sure we'll all be able to get through.

One quick warning I've picked up lately: Watch those green onions! As of Friday, 3 people have died of Hepititus A, out of 25 total infected. The source: uncooked, raw green onions (imported from Mexico)

The U.S. quickly banned the import of Green onions when this surfaced, but who knows how many made it through. So, while I don't want to come off as overly paranoid (It is only 3 people out of 250 million), better safe than sorry.

Funny that I just saw your post because I just finished having a slice of low carb pecan pie!!! I love pecan pie and this was not exactly the same but it tasted darn good!!!

I, too, LOVE pecan pie. In fact, around this time of the year I used to have it for breakfast with coffee. But, I have found a new LC way to enjoy pecans! I put them in a small bowl, add a little butter and a packet of Spenda, put it in the microwave for a few seconds (just long enough to warm them and melt the butter), stir, and I have my mock pecan pie !

Ohhh I was wondering about how to do an LC pecan pie. I couldn't think of a corn syrup subs.

I am already making an LC apple pie (family whining apple pie is traditional) but my crust mix makes 3 crusts. That means I need to figure out a second pie to make that's a one crust. I know Pumpkin is more traditional, but a pecan or french silk sounds fun


I have found LC alternatives to almost everything and have a large thanksgiving feast planned. I'm not missing anything that would make me feel deprived this holiday season, and hopefully I can kepe from putting on the holiday 5. My only worry is the Lc biscuits as many LC bread items taste nasty.
