Default What foods do you prepare in bulk?

The ones I do now are preparing a the whole thing of lettuce at one time and putting in a container in the fridge.
Just tried doing a pound of bacon today. Can that be reheated? I will try it.
Also, cooking up any large quantity of meat-like steak, hamburgers, lamb chops.
I have been tempted by carb foods since they don't take much work to prepare.
I have beef jerky ready too, so I don't have to make any effort.
How about you?

  • hard boiled eggs/deviled eggs

  • grilled meats frozen in individual baggies
  • spaghetti squash frozen in individual containers
  • jello
  • smoked turkey, cream cheese and pickle roll ups
  • all chopped veggies
  • dips
  • frozen mini quiches

Jimbo I, regarding the bacon, there is an easier way. Both Oscar Mayer and Hormel make pre-cooked bacon. All you have to do is nuke it for a few seconds and it's ready. You also avoid the grease mess this way.

Hamburgers, pork loin, chili, hard boiled eggs (which I never end up eating).

Have you tried the pre-cooked bacon ? Only takes a minute or 1:30 in the microwave. Can be expensive if you buy the little box at the grocery store, but if you get the big package ~ Sam's or Costco, it's like $7 for (what the package says is) a 3lb cooked equivelant. Really good too.

I make bacon in the microwave in a few minutes anyway. Line a plate with a paper towel, put your strips on it, and cover with another paper towel.
My microwave has a bacon button, but you can try 2 minutes or whatever your microwave works at.
Then peel off the paper towels to throw away, and the microwave doesn't even get dirty!

Thanks all-I will try the pre-cooked stuff. This will help save time and make sure to keep me on Atkins.
I find it interesting that I always learn something new about LC'ing every time I visit here.

I bake a pound or two of bacon in the oven.
Actually, I make ALL my food on Sunday for hte whole week. Everything, from the salads, to the snacks. I hate cooking during the week.

In addition to putting the pound of bacon in the oven, I also make a batch of Veal Saltimbocca http://atkins.com/food/recipes/all/...ltimbocca.html? except I use fresh spinach instead of sage. This will make a week's worth of lunches for me.

Well, I for one found that I CANNOT cook a whole pound of bacon at once, or the whole pound of bacon ends up in my tummy that day. You guys must have amazing willpower. Hormel bacon bits (real and soft, as if you made them yourself) are my saving grace, tossed into salads and omelettes.

Earlier this week I bought a family sized package of 12-14 boneless chicken breasts, and poached them all at once. Very handy. Sliced them over pasta one night for the non-LCers in the family, and used them as a main dish for me. (one night I shredded them, sprinkled on Paul Prudhomme chicken seasoning plus some ground cayenne, them topped with mozzerella cheese and nuked until melted--mmmmmm.)
