Thumbs up UK Sunday Lunch - Missing Roast Potatoes!

How many of you miss roast potatoes with your Sunday lunch?

Well, in case you have not already discovered them roast swede makes a great alternative. I'd not thought of this until last winter when I read a post from Karen about roast rutabaga. What was that I asked? Well Rutabaga is swede to us Brits.

Anyway, swedes are back in the shops again now. Prepare it just like a potato and roast it for around 40 minutes.

Yes, swede is low carb at only 2.6 g carbs per 100g so you can have quite a lot.

You might like to also try it mashed with butter and for those who don't mind a few extra carbs mash it with a carrot.

Enjoy.

Hi there,

I love swede and I definitely miss potatoes with roast, though that's the only time I have missed them.

I''ve been experimenting and have come up with a cauliflower bake: cooked cauli with chopped spinach and grated cheddar mashed together well and more grated cheddar on top baked until brown and bubbly. Delicious. I'm getting through about two cauli's a week as everyone loves it, not just me. I've also tried adding a little parsley or spring onion. They're nice too.

I'm going to try the swede for sure.

best
Alison

And it's also called "turnip" or "yellow turnip" in Canada. Even though it's yellow and purple on the outside.

You can make amazing "French Fries" from rutabaga. Just cut them in the appropriate shape and deep fry. Yum! Being Canadian, I have them with a little vinegar and salt (just like British 'chips') but they'd probably be good with the US idea of mayonnaise too.

Chips in the US = potato crisps (UK)

It's funny all the different names, i've certainly learnt a lot since starting LC.
So what do you call Turnips then?

Me too, it's one of my "comfort" foods from childhood. Not had it since starting low carb though - definitely one for the shopping list.
