For those of you that choose to deep fry them. Can you tell me how you do it? How long do you cook them for?

Just eyeball them. They will turn a nice golden brown. It takes about 10 minutes. Maybe 8?

On the recipe section of this site, there are a lot of people who swear by Frank's Red Hot recipe for sauce... here's a link... http://www.franksredhot.com/recipe-...p?recipeID=5433

I'll probably try this... unless Frank's is incredibly spicy... and then i'll have to find something milder... any suggestions for a good, flavorful mild sauce?

Funny story about buffalo wings. Years ago, when buffalo wings had just got started, my mom was at a restaurant with another lady. My mom ordered buffalo wings and her friend said, "I didn't know buffalo had wings". Needless to say, we've gotten a big kick out of the re-telling of this story over the years. I love deep fried wings with or without the hot sauce. If you don't like them too hot - just use the garlic salt, black pepper, etc. to spice 'em the way you like! There's no right way to eat them. My kids just love them fried with nothing on them and dip them in ranch dressing. If you do decide to try them hotter, add a couple of celery sticks with bleu-cheese dressing to cool your tongue. That's how we ate them in New York.

Ummm.....what kind of oil do you use to deep fry the wings in? I always thought oil was a no-no unless it was olive! Have I been missing out on wings for 11 weeks when I could have had them? My mouth is watering now!

I use canola oil. I'm almost positive it's okayed in the book. I'd check, but a friend borrowed it. Maybe someone else can check this in the book for you.

Another wing recipe that is not so spicy but delicious is to coat the wings in butter and then in parmegan cheese mixed with paprika, parsley, oregano, salt and pepper. Bake (on foil!!!) for an hour at 350. Of course you can season to taste--Cajun blackened seasoning is my favorite.
