Default Bacon without nitrites

I tried a Whole Foods brand of non-nitrite bacon and it was truly terrible. No flavor!

Does anyone have a good brand to recommend?

I still have yet to find a nitrate-free bacon that is palatable. So, I eat regular bacon...but within limits and I was OK with that. Same goes for cold cuts, frankfurters, slim-jims....anything with nitrates. The key is to eat these minimally and eat non-nitrate meats moreso!

They brands I buy are not available in the usa, but keep trying, maybe check with a good little butcher shop. Cause there is some very good ones out there, the only difference I can taste is less salt. Plus the N/N does'nt stink up the house quite as much, LOL

Default Applegate Farms

Makes Nitrate Free Turkey and "Sunday" (pork) Bacon..
Both are really good, though the turkey one has less fat so is less "atkins". To my palette the Sunday Bacon tasted exactly the same as "normal" nitrate-pumped bacon. They also make yummy sausages

Quest, was the brand you tried Whole Foods' Niman Ranch brand?

I'd be interested in knowing, because that's the only kind we can get at our Whole Foods here, and I'll avoid it if it's terrible.

We've been eating small amounts of the Niman Ranch bacon WITH nitrates, and it's just delicious, but of course I'd like to avoid the nitrates if possible.

I just eat the regular low sodium bacon. Forget the nitrates.

It doesn't seem to say Niman Ranch anywhere on it. It is packed in Austin, Texas for Whole Foods and is Unsmoked centercut bacon, with beet coloring added in lieu of nitrates.

Wait! I just bought the best bacon ever eaten (with or without nitrates) at the Whole Foods in the DC area.

The label says Wellshire Farms
Thick sliced Uncured Dry Rubbed Bacon
No Nitrites or Nitrates or Antibiotics

The packase is yellow, black and clear plastic with a God Bless America sticker on it.

Anyway, the pieces were thick, very meaty, tons of flavor. I bought 4 packages (to freeze, as we don't live anywhere near a Whole Foods), microwaved up one package for the week and ate way too much of it the first day because it was so yummy.

A bit pricy, but not too bad: $4.99 for a 12 oz. package.

From the back of the package:

Wellshire Farms starts with all natural pork that is wholesome fed without animal by-products in the feed and has never been administered anitibiotics. Our bacon is seasoned without the use of water, we hand rub each slab with natural spices that are guaranteed pure and not chemically extracted of irradiated and let the slabs stand for up to 7 days before cooking. Bacon is then smoked using a mixture of natural apple and hickory wood. We smoke our bacon to create a unique aroma and flavor that enhances its taste. Wellshire Farms bacon has a light pink color, which is the natural color of bacon. WF label clearly states that our bacon is all natural and contains nothing artificial.

hmmm.... I dont have the luxury of choosing a brand of bacon at school. I wish I could thought, because the bacon here is dried out and salty.

The nitrat-free bacon at Trader Joe's is the best bacon I've ever made. It's VERY fatty but man,is it good! Sorry - don't know the brand. If I go tonight, I'll report back...

I don't know what kind I got at Whole Foods, but it was the slab bacon sliced at the meat counter. MMMMMMMMMMMMM... really good and nitrate free. I loves me some thick bacon.

ok, I've got some good bacon suggestions here! I didn't think of getting bacon from the meat counter at Whole Foods. Duh! There is also a trader Joe's near me. And my grandparents lived in Swedesboro, N.J., so I HAVE to try the Wellshire Farms one.
