Default Onion Rings & fried veggies YUM!

I made the best stuff last night
I made a tempura batter out of Atkins Bake Mix:
1 cup Mix
1 cup Ice Water
1 egg
Dipped onion rings and mushrooms and fried in veg oil.
They were absolutely delicious. Its the first time I used that Bake Mix and didn't taste a "funky" taste.
Can't wait to make more and think of some other veggies to fry.
Maybe zucchini, broccoli, artichole hearts.....

I think I'll try this with one of the Atkins' Mix clones. Sounds like a great treat!

Nice ideas -- I wonder how dill pickles would do this way? Or, stuffed jalapenos?

Now I'm feeling the need to fry something. It just so happens I have a Tilapia filet out for frying tonight. Maybe I'll just have to do a few "appetizers" first!

I remember a restaurant that served 'shrooms, mushrooms caps filled with herb cream cheese, battered dipped and fried. I haven't thought about them in so long. Gonna try making 'em!

This is what makes this board so great. It's impossible to be ultra-creative all day every day in real life. The LC Martha Stewart I ain't!

So, one person posts an idea or a recipe and another has a suggestion for modification to fit a different taste, or it sets off someone's memory on a favorite dish that can be LC'd.

I'm going to have to try the stuffed mushroom idea. My husband loves mushrooms and other than adding them to omelets or Deep Dish Pizza Quiche, I'm pretty much worthless on the fungi front. I'll have to practice with them while he's away tonight. Wow him at dinner tomorrow?
