Maltitol is a "sugar from alcohol" or "sugar alcohol". Most (but not all) people cannot convert sugar alcohols to glucose, thus the carbs in Maltitol are considered "non-impact", and can be subtracted from the Total Carbs, just the same as you would subtract the carbs from "Dietary Fiber".
The problem is, not everyone reacts to sugar alcohols in the same way, so it is a good idea to experiment a bit before launching into a menu that is filled with these items. With a little testing, you should be able to tell what, if any, impact these carbs have on your rate of weight loss.
