Coleslaw with raisins, a bacon/tomato sandwich on whole wheat bread, ice cream with a banana and chocolate sauce, 3 prunes, 1 macadamia nut cookie.

Roast leg of chicken, broccholi, corgettes (zuchini?) and roasted parsnips with stuffing (made from almond flour and herbs).
Dessert - strawberries.

I had steak rubbed with a 6 pepper mix I got from Sam's club (SF, 0 carbs).

Nothing as exciting as some of the rest of y'all! Since it is really hot and humid up here in the Northeast I was not willing to cook anything, so dinner consisted of tuna salad, coleslaw, and sliced tomatoes from my garden.

cucumber chicken (atkins quick and easy recipe which surprised me by being so yummy)

I overdid it at the grocery store and had too much to carry home with me in the heat and humidity, so I was too tired to cook. The apartment was too hot, anyway. The appetizer was a t-a-l-l glass of fresca (citrusy diet soda) with ice. Dinner was green pepper slices and cold leftover chicken breast dipped in ranch dressing. Good enough for me!

I made a lasagna for the family and baked myself some spaghetti squash topped with meat sauce and mozza cheese. Mmm-good. I had the leftovers for lunch today too. Even better the next day!

Tonight we had rotisserie chicken with a big tossed salad (mixed greens, cucumber, tomato, radish and red onion) with a bit of shredded cheese on top and Caesar dressing along with a hot veggie (California blend) for those that didn't care for salad. Sugar-free ice cream for dessert.

Last night was Chicken Florentine (boneless chicken thighs on top a bed of spinach cooked with bacon and onions and sprinkled with parmesan cheese)

home made coleslaw
lettuce, onion, tomato salad with lime and oil dressing.

Love our menus. Surprisingly enough, no one sitting down to a plate of meat alone to gorge on, as represented by UK media ;-)

Last night we had oven-baked quarter pounder burgers (they are more succulent when cooked in the oven), with melted emmenthal cheese - on the side - a salad of rocket leaves and sliced tomatoes - with sour cream and chives. Pudding was strawberries and blueberries smothered in thick double (heavy) cream

The tomatoes we had were Italian Sanmarzano plum tomatoes, which I came across when I was food shopping yesterday - they are used in Italy for an authentic ragu sauce - and the Italians also eat grilled on ciabatta drizzled with olive oil. They were just as delicious though sliced and uncooked in our salad


Amylee, that molten chocolate cake on a bed of crème anglaise with strawberries sounds wonderful - could you supply the recipe for the cake please??

We had my own recipe for pizza casserole. It's everything low carb on a pizza thrown into a casserole dish and baked until bubbly. plus some steamed cauliflower. it was great and it makes a great breakfast too! :-)
