Default Question on Netzer's food counts book

In Corinne Netzer's, "The Complete Book of Food Counts", under the "Food and Measure" column, it is not clear to me, with some of the foods listed, if the author is referring to cooked or uncooked portions.

For instance, is 4 oz of lamb referring to the weight of a portion of lamb
before or after cooking?

Any feedback is appreciated. Thanks!

hi there,

I have the 5th edition (2000, yellow cover)

If the listing in the book is for, say, lamb shank, roasted, you'd weigh the portion after cooking. If it's listed as raw, then you weigh it while raw. The cooked portion is generally higher protein and lower fat for the same weight, since some moisture and fat will drain away during cooking.
