VOTE FOR!!! Spicy Bacon Prawns/Shrimp!
Spicy Bacon Wrapped Prawns
approx 2 carbs (fitday) w/out salad
4 Prawns (U-5) or --substitute shrimp of choice
4 Slices Peppered Bacon
1 T. Olive Oil
2 cloves garlic minced(I LOVE IT!) --substitute 2 heaping teaspoons of garlic puree or powder, adapt if you don't like to chop/press fresh garlic
1 t. chili powder
1 t. paprika
1 t. onion powder
1/2 t. red pepper flakes
pinch salt
8 toothpicks
Soak toothpicks in a bowl of water.
Clean shrimp and pat dry.
Put ingredients 3-8 in a bowl and stir. Add unpeeled shrimp and place infridge to marinate for 1 hr or even overnight is OK for more flavor.
Partially cook bacon in microwave until almost cooked, but not crispy. Wrap bacon around shrimp, securing each end with a toothpick.
On a greased broiler pan, broil each side for about 3 minutes, depending on the side of your shrimp/prawn. THe bigger, the more time!
I served this with a bed of romaine tossed in a light romano vinagrette and sauteed baby squash.
Sauteed Baby Squash
12 oz. bag Baby Squash (can be purchased at Albertsons)
1 slice bacon
1 T. butter/olive oil
1/2 t. red pepper flakes
dash of S&P
1 lemon wedge
Snip corner of bag. Microwave for 2-4 mnutes depending on your microwave. Mine only needed about 2 min.
Snip bacon into tiny pieces, cook till crispy, add butter spices & veggies, stir for about 3 minutes to brown slightly. Squeeze lemon to bring out flavor. Voila!
