My latest veggie breakfast fave is sort of a pancake: mashed tofu, an egg to hold it together, and chopped green pepper. Fry it for a minute or two, then flip. Add grated cheese on top, if you'd like.
I also like Yves veggie Canadian bacon. It tastes quite good and only has 1 g carbs in 2 slices. Beware of their other products, though - some have a lot more carbs.
