Default LC Greek Spinach Pie Quiche

I have been trying to convert some of my favourite recipes to LC so that I am not tempted to cheat and I don't feel deprived - this one worked out so well, I thought I would share it.

6 eggs
1/4 c half&half cream
1/4 c cream cheese, softened
1/3 c feta cheese, crumbled
10 oz package of frozen, chopped spinach (thawed and drained)
1 tsp dill weed
1 clove garlic, minced
1/4 c minced onion
salt and pepper to taste

Blend the eggs, cream and cream cheese. Add salt, pepper and dill.
Make sure the spinach is as dry as possible (I squeeze and blot it on paper towel). Mix it with the onion and garlic and spread it in a greased deep glass pie plate. Sprinkle with the feta, pour egg mixture over top.
Bake at 400 for 15mins then turn down to 350 and bake for 30mins. Let sit for 5mins to set.

This is awesome hot or cold. I've put it through FitDay and here's how it came out for the whole pie (b/c I'm never sure how big a serving is)

Total: 940
Fat: 69 617 67%
Sat: 34 305 33%
Poly: 6 52 6%
Mono: 21 193 21%
Carbs: 25 62 7%
Fiber: 9 0 0%
Protein: 59 237 26%
Alcohol: 0 0 0%

By my calculation this is 16g net carbs for the whole darn pie! Enjoy!

This recipe sounds really good, but is there something I can substitute for feta cheese? I realize the feta is probably what makes it "greek", but i really don't like feta cheese.

If you don't like feta (I'm Armenian, how could anyone not like feta? ) you might try a good cheddar.

I find feta too salty! my parents are from cyprus so they love cheeses like halloumi, I find it too salty also...I know, it's strange

Soak the feta in watered down half and half for a few hours. Then rinse. That will take a lot of the salt out.

My pleasure. Have a look at my bored with meat thread, the feta in that turns very creamy and light.

My dad was from Larnaca in Cyprus so salt seemed an inevitable part of life. I adore halloumi cheese but the softer version not the hard salty one unless it's to grate into things.

Now the one thing I DO miss...flaounes for Easter and koulourakia. I wonder if I could make koulourakia with ground almonds??Oooo.

I have saved this from ages ago and just made it today. It is FANTASTIC!!!!!!!!!

The only change I did was use a bunch of fresh spinach that I stir-fried for 2 minutes till it was a little wilted. I fried it in the garlic and onion. Smelled like heaven! yum...

I have 5 favorite recipies. This makes #6. Thanks for sharing!
