Default What's your favourite LC dinner?

This is a picture of mine if it will post. (I had it tonight)



It's a lamb shank cooked slowly in tomatoes, onions and olive oil with cinnamon, oregano and garlic. Served with crisp fried eggplant slices, feta cheese and a mixed salad. I was in heaven!

DH says it sounds good! It sound very much like a greek meal to me!


I really like ranch jack chicken. And it is pretty easy to make.

Tonight's dinner was pretty great and quick too!

We had reheated grilled chicken, broiled tomato half with fresh oregano, and creamed spinach.

I had shrimp scampi (shrimp, garlic and olive oil) with steamed broccoli and grilled zucchini. Dh had the same veggies, but scallops scampi

My favorite meal is grilled chicken breast marinated in Italian dressing, spinach and a salad w/ranch dressing. um um

Crustless sausage quiche with a small caesar salad. Fabulous for dinner and even better as warmed up leftovers!

Two of my favorites are from Sam Clubs freezer section..
Scallops or Phillips Crab Cakes. Sauteed in butter, lemon juice and garlic.

Expensive, but oh so good!

Rib-eye or NY strip steak...sauteed in olive oil and GARLIC...take out steak, add in spinach & mushrooms into the hot flavored oil...flash fry spinach/shrooms...dump spinach/mushrooms over the steak...top with tab of butter...salt sub...HOT peppers...dash oregano...and Manga! Yum!

Top Sirloin Steak with 2 cups mushrooms in Butter

Easy one tonight, mushrooms are a killer 2 cups count as 4g Carbs!

Beef Enchilada Casserole (great recipe gleaned from this site!)
with sour cream, salad with jalapeno ranch dressing...

I love a big burrito... Ground beef sauteed with chili pepper, a simple guacamole with avocado and tomato, shredded cheese, black olive slices, salsa, and sour cream in a huge LC tortilla. Mmm... or throw it all over some lettuce for a taco-less taco salad.

Or... deep dish pizza quiche.

MaryTou - no, not always!! lol I was just sitting here after cooking dinner, looking at the plate thinking if only all those low fat dieters could see this! Then I thought that if we posted some of our faves, it might perk up the enthusiasm a bit. I know after a while even thinking about food becomes a chore so I thought I'd cause a bit of a stir.
