Default almond meringue cookies - lc?

How lc would these be?
Almond Meringue Cookies


4 egg whites
8 tablespoons powdered skim milk
1 teaspoon vanilla extract
1 teaspoon almond extract
1 teaspoon (4 packets) Sweet 'N Low®

Beat egg whites until stiff. Add skim milk powder. Mix well. Add
extracts and Sweet 'N Low. Spoondrop onto cookie sheet. Bake at 275°F for 45
minutes. Remove from sheet and dust with cinnamon.

32 Calories per cookie.

I don't know about the carb count of the milk powder, but meringues are basically carb-free except for the bulking agents in the splenda. I'd skip the skim milk powder and add 1/8 tsp cream of tartar (to stiffen the whites), and perhaps another packet or two of splenda if you feel it necessary. If you did that, it would be about 5 carbs for the whole batch. Meringues are like the ideal LC dessert, I make 'em all the time!

Cool! I hadn't thought of meringue...which makes me think of "Moon Pie" which is a puff-pastry base, but you could substitute meringue, smothered with chocolate pudding (sugar-free, of course), and topped with whipped cream. It makes a very festive party dessert.

Use whey protein isolate instead of the milk powder. There are less carbs in it than in milk powder. Remember to "fold in" and not "mix in" or the meringues will lose their volume.

Karen, what's the purpose of the milk powder? I assumed it was to stiffen them up a bit and give them a little flavor, but is there some other advantage to using a protein powder of some sort? I make meringue cookies all the time with a recipe from the Joy of Cooking (egg whites, sugar/splenda, vanilla, and a tiny bit of cream of tartar), so I'm just wondering what the point of adding the protein powder at all.
