I'm Asian, so I LOVE tofu--I don't think of it as health food at all.
For a snack I like to steam or microwave a block of silken tofu, and douse it with the following mixture:
Soy sauce
bit of minced garlic
Scallions, chopped
Sesame seeds
A bit of sesame oil
Crushed chili peppers (optional)
For smoothies, mix with splenda sweetened scoop of protein powder and cream. For fruit smoothies, mix with frozen berries, splenda, and cream.
Another dish popular in China is warm silken tofu stirred with ginger syrup--this syrup recipe is actually in the Atkins quick and easy cookbook, although I don't like it. For this syrup, you might try ginger infused splenda maple syrup, but I haven't tried that one.
