Here's the recipe I use ..
Mayonnaise
1 very fresh, grade A large egg, no cracks or other contaminants
2 Tbsp fresh lemon juice, or 1 Tbsp each lemon juice and cider vinegar
1 tsp dijon mustard
1/4 tsp onion powder
1/4 tsp salt
1 cup olive oil, or blend of olive and canola

- in blender or food processor - blend everything but the oil. Drizzle in the oil very slowly, until blended and thick. Makes 1-1/4 cup, or 20 Tbsp. 3.9 carbs total, 0.2 carbs per Tbsp.
