Default Mock coconut custard pie??

Years ago I had an old WW recipe that used the spaghetti squash for this, it was soooo good. I can't find it now, but I was thinking it could most likely be converted into a low carb treat. Has anyone heard of the recipe or better yet have a copy of it ????

Coconut-Custard Pie Recipe

Hi! This is a fun recipe, adapted from "Weight Watchers Favorite
Recipes." If you squint really hard and look sideways at the finished product, you can almost pretend the squash is real coconut.

COCONUT CUSTARD PIE

2 c. cooked spaghetti squash
1 c. skim milk, or equivalent
4 eggs equivalent
1/4 c. flour
1/4 c. sugar
1/2 t. vanilla extract
1/2 t. coconut extract
1/4 t. double-acting baking powder

Preheat oven to 350. Spray a 9" pie plate with nonstick spray. With
the back of a spoon, spread squash over bottom and up sides of plate.
Set aside. In blender or food processor, combine remaining
ingredients. Pour over squash and bake 50-60 minutes, until a knife
inserted in center comes out clean. Transfer to wire rack to cool.
Cover and refrigerate overnight.
