Sad story
I just wanted to share this story. One of the special ed teachers I work with passed away very unexpectedly. She had diabetes and congestive heart failure. She died in her sleep on Monday. She was 51 YEARS OLD! She was sweet, full of life, and we all loved her. She was treated for her diabetes using the typical protocol. She often complained of being tired, was always hungry and snacked all day on carby snacks. She didn't know any better and was trying to follow medical advice. I wish I would have shared more with her about my LCHF diet, but reality is once you are on as many meds as she was it takes a supportive doctor.
The morning of her passing I went and sat with her students at breakfast. They were totally unaware at this point and just eating breakfast as usual. I have never seen the breakfast that is served and was totally shocked. All the students' breakfasts included french toast sticks, two syrups, banana, strawberry/chocolate 1% milk and OJ. The sad irony hit me like a ton of bricks.
