Default Tuna Melt Salad

This is one of my favorite quick meals and even my kids love it which is a miracle, believe me! I stumbled on it by accident, I was in a big hurry and there was leftover tuna and mayo in a bowl in the fridge. I haven't seen any recipes for this, although I 'm sure they must exist in some form. Anyway, this is what you do:

Mix a tin of tuna with your favorite dressing or just Mayo and some salt and pepper or whatever seasonings you like. A bit of lemon juice is nice too. Be generous with the mayo.

Next spread the tuna mixture in a wide cereal size bowl, and cover with alot of grated cheddar cheese. Microwave on high for a few minutes checking every minute. You want the cheese totally melted and I like when it gets a bit crusty around the edges. Usually 3 minutes.

Arrange lettuce, spinach or your favorite greens on a plate. You can add any veggies you want. Mushrooms work well. Then spread the tuna /cheese mix over the lettuce, while its still hot. Eat it right away. It is so good, especially in the winter, when you want something warm and filling in a hurry.

I'm not a carb counter, but it should be pretty low in carbs. I now mix up two cans at a time, since my 8 year old always wants some. It is easy to take to work as well. Let me know if you try it!
