Default Jello Sugar Free Pudding Mix

So it's the holiday season and I'm a bit rushed at the supermarket. I figure a nice LC dessert for New Year's dinner would be to make up the Jello sugar free "cook and serve" chocolate pudding using half and half (instead of Jello's suggested fat free milk). Serve them up in ramikins topped with homemade whipped cream and a dusting of cinnamon. Sounds classy, right?
I bought 2 packages last week and am looking at them this AM in prep for making them up for tomorrow when I see they have 7 grams of carbs even without the milk. I look at the ingredient list to figure out where are these carbs coming from and the first ingredient is cornstarch. The third ingredient is modified cornstarch. Of course, thinking about it I realized they would have to have something to thicken the pudding and that's where all the cornstarch comes in. But I was so rushed while shopping I just assumed when I saw sugar free that it was okay to eat.
I gotta remember, no matter how busy I am, to read the label, read the label. Now the only problem is who am I going to foist those 2 boxes of pudding mix on, cause I'm sure as heck not eating them .
