Default Chocolate Drops



This is an unsweetened, LC rendition of my aunt's peanut butter chocolate balls she makes every holiday with peanut butter, a lot of sugar, and rice crispies coated in chocolate.

Ingredients:

2 tbsp unsweetened powdered cocoa (4 ECC)
2 tbsp coconut oil (butter or other oil would probably work fine too)
2 tbsp heavy cream (0-1 ECC)

2 tbsp peanut butter (4 ECC)
1/2 cup LC cereal, crushed (I use hi-lo, 6g ECC)

Instructions:

In a double boiler, heat coconut oil and cream together. Once melted, remove from heat and add powdered cocoa. Mix, it will not want to mix to a creamy texture, but that's okay. Add in the crushed cereal and then the peanut butter. If it's too cool to mix evenly, re-heat.

Once everything is mixed evenly, drop onto cookie sheet or I just used a plain ol' plate. Freeze, about 10 minutes. Store in freezer (if they last long enough to be stored!

Yield: 7 drops

Carb Count: ~2 ECC each

They are pretty chocolaty, and they have good texture because I use nutty peanut butter and I don't crush the cereal to a dust. Also, the frozen coconut oil is very creamy.

The measurements I just made up, because I think they'll be easy to remember, but there's probably some better ration out there. Also, I'd bet they would be good with some slivered almonds or walnuts. I'd love to hear what else you think might be good in these!
