Default Tips and Uses for Coconut milk

One thing to remember about coconut milk or coconut cream, SHAKE the can before opening. And don't store it in the can, put it into another container to store it in the fridge. (unless you just chug the whole can whenever you open it, like PaleoDeano. Now that's hard core!)

I've found from my cooking that Thai coconut milk tends to be better, or at least more consistant than brands from other countries. If you open it and it smells kind of funny, ie not like coconuts at all, don't use it. Also, check to make sure it doesn't include sugar which some brands have taken to including. Remember, most of the brands you'll see come from third-world countries where food safety and quality control are not always up to snuff. Most of the big brands are quite dependable, but sometimes smaller brands are more iffy.

I have to say I've never tried it in coffee or tea, but I could imagine if you had a good flavored tea, especially something like mango or peach, that it would be quite good. You can use it as a marinade for meat before grilling. Smash or whip up a small amount of papaya with some coconut milk, lime juice, salt and chili and you've got one of the best grilling marinades. It tenderizes naturally while giving amazing flavor. Good for chicken, fish, pork or beef. (lamb doesn't do so well) It's also great in soup with chili, lime, basil (or cilantro) and meat. (of course)
