Default Baked Muffin Omlettes

Hi guys! I came across this niftly little idea a few days ago and thought I'd share it with you. They're really yummy (maybe a tad too yummy, I had four today when I was bored!!) Anyway, they're basically an omlette mix that you bake in the oven in a muffin pan. Here goes (and PS the measurements/weights are in metric, sorry :-( but should be easy enough to do conversions on the net)

Preheat oven to 200 degrees Celsius
Grease muffin tin
Fry 175g chopped bacon
Add 250g mushrooms and fry

Meanwhile, mix 8 eggs and some shredded cheese in a jug.

Spoon some of the bacon/mushroom mix into the bottom of each muffin "cup" in the pan thingie and then pour the egg mix over the top. Bake for approximately 18-20 minutes (depending on your oven, mine took a bit longer) and voila! Just like muffins or cupcakes, only low carb!
