Default Classy Chicken and Broccoli - Best of Bridge recipe tweaked

I was just looking at the Chicken broccoli recipe on another thread and thought I would share a recipe I have made several times that is much loved by my family.

It is based on the Classy Chicken recipe in the Winners cookbook from the "Best of Bridge" series. Chicken and broccoli under a very mild curry sauce topped with cheese.

The recipe calls for browning chicken pieces (3 whole breasts, is what the original recipe called for) and steaming broccoli (as much as you want to serve - maybe a pound - you can use frozen, or even cauliflower or asparagus) . Put the broccoli in a large buttered baking dish (say 9" X 13") once it is tender crisp. Top with browned and cooked through chicken pieces either whole or cut smaller - your choice. Pour on a sauce made of 1/2 cup mayo, 1 tsp curry powder, 1 tsp lemon juice, and about a cup of creamo or whipping cream (depending on your level of Atkins - sometimes I just can't use that much whipping cream so substitute coffee cream or half and half). I often double the sauce recipe cause its very good and there are so many of us. Top the whole thing with a cup or two of grated cheddar (or whatever you have) and bake at 375 for about 30 minutes.

Yummy - my boys like extra cheese on top. Is wonderful served with cauliflower rice or even the garlic mashed cauliflower. This is the kind of dish where you lick out the pan as you do the dishes.
