Here's what I know of them that can cause them:

Too much caffeine. Maybe you've become more sensitive to caffeine since you changed your diet.

Hyperthyroidism. I had a very fast (like 100+) heartbeat and palpitations when I had a thyroid disease. Other possible symptoms include insomnia, weight-loss (although that didn't happen for me... figures), hairiness, shaking hands, bad temper, sweats, always too warm, dry itchy skin.

Stress.

Probably other stuff. Definitely see your doctor if cutting down on caffeine doesn't help. You might have a thyroid condition.
