Default Why does everything contain sugar?

In the Atkins book he says you can have any meat. Salami, Ham etc. When I look at the ingredients they all have sugar or something similar in them. How do you count the carbs in these meats. I have really been living on bacon and eggs for breakie, a tuna salad for lunch which contains a small tin of tuna, 2 cups of lettuce and some cucumber and maybe celery, a bit of olive oil and a smidge of balsamic vinigar. Then for dinner I am having 2 or 3 chops with a flower of cauliflower, I really dont know how to go about counting the carbs. I have just thought to myself if I want this woe to last i have to vary my meals otherwise I will get even more bored than I am and give it up. I have read so many success stories to know that this works and to know that you can vary your meals I just dont know how. I want to do this forever, just properly. I also may have a celery stick with cream cheese if I am hungary.

Another question, can you eat inbetween meals or not?

Also in the book he states that you can have cheese, whatever cheese you like. Do you all count the carbs in your cheese? I have not really been counting carbs just trying to avoid them.
