Default appetite concerns

I keep hearing about natural reduction in appetite and while I certainly eat a great deal less than I did 8 months ago before I started Dr. Atkins, I'd hardly say I have little appetite.
I just eat a lot differently obviously or the weight would not be coming off.
However, I am still in the kind of mode I used to be in where I can either bring myself to just skip a meal altogether............or else I want to eat a pretty large portion of something. I have no cravings for sweets, but never really did.
On the other hand, cooking a half cup or just one cup of a vegetable like broccoli just doesn't seem worth the effort so I usually cook a whole bunch. Same with salads.
I am managing to stay under 2,500 calories 9 out of 10 days, and usually under 20 carbs though I sometimes go as high as 26-28. My fat content, thanks to large intakes of bacon, is about 67 to 72 %.
I recently read here that increasing carbs can lead to increased cravings for sweets but since I have no interest in sweets anyways........any harm in doubling my carbs with more veggies?
I know, I know. Try a little at a time and weigh the results......but that not only consumes more time, it also leaves me open to gaining weight at a time when I only want to lose weight. That's why I'm asking here. To avoid taking the chance of gaining weight.
For instance, I'd love to just cook a whole acorn squash and eat it with butter, brown sugar Sugar Twin and some nutmeg - but not if I run the risk of gaining weight.
Any thoughts welcomed!!!!!!!
