Just started atkins and so have been thinking about food quite a bit... FInally thought, hey what is it that I usually can't have on a diet? and lo and behold, works great for atkins . Very simple and I had to give the recipe out 14 times at the last party brought it to.

1 cup parmesian cheese
1 14.5 oz can artichoke hearts (not the marinated kind) chopped
1 cup mayo
1 clove garlic minced or a sprinkle of garlic powder
a squeeze of lemon juice

Mix all ingredients together and bake at 400 for about 25 - 30 minutes, should be hot , golden brown and bubbly.

Serve with endive leaves (works great, tried it last night)
