Roasted Green Beans
These are great! My sister made these for me a few months ago and I haven't eaten them any other way since. They look a little 'ugly' but they taste great. This also works for asparagus.
Top and tail the green beans and place in a bowl or plastic bag. Add 1 - 2 TBS olive oil (depending on the amount of green beans) and stir (if in a bowl) or mush around (if in a bag) until beans are well coated. Place on a cookie sheet covered with quick release foil, add coarse salt and pepper and roast at about 410 for 25 - 30 minutes, or until beans start to brown and get wrinkled.
Asparagus takes less time, about 15 - 20 minutes
