This recipe is really Rob's who posted it in the sweet treats section under the heading "Thought you died and went to heaven" cake.
I didn't think it was quite sweet enough for a cake and started making half the recipe as a substitute corn muffin. Then one day I decided to see what would happen if I baked it in the oven. WOW! They are so wonderful! The texture is somewhat like a corn muffin. The whole recipe makes 12 mini muffins - probably 6 standard size. Try different extracts to vary the flavor- almond or orange are both nice.
Muffins: Preheat oven to 400
Combine
4 TBS melted butter
2 eggs
Add
1/2 tsp Vanilla extract
2 TBS Splenda
In a seperate bowl mix
2/3 cup Almond flour
1/2 tsp baking powder
Mix the flour mixture into the wet mixture.
Divide into greased muffin tins (12 mini or 6 regular)
Bake about 12-18 minutes depending on the size. They
should be slightly golden brown and spring back when you gently press
the tops.
Try them with some whipped cream cheese! I hear they are also great with ground pecans.
