Default Carblight's low carb chocolate cake

I have just finished making this. I made up the recipe inspired from other low carb recipies. I have tasted it and it is scrumptious! I thought you might enjoy it too. The cake is for a special occasion, not for every day It has about 430 cals per piece and 8 carbs. I came up with it so as to not cheat on my brithday. I plan on eating very few carbs during the day and having a slice of this at my birthday party and a glass of dry white wine. This way i will still be able to feel I celebrated :-) I plan on cooking two of these so all my friends can have a piece too.



Crablight's low carb chocolate and raspberry cake

Ingredients

2 cups almond flower
2 cups flax meal
2 cups coconut flakes unsweetened
8oz unsweetened baking chocolate
2 cups splenda
3/4 cups butter
5 eggs
2 teaspoons baking soda
1 cup rasberries
wipped cream
stevia

Put almond flour, flax meal and coconut flakes all togther in a bowl ad mix them up.

Melt chocolate and butter together (put them in a medium sized heat resistant bowl inside a pot with a few inches of water- the heat of the water heats the bowl and the chocolate/butter inside it melts).

Wip the eggs in a separate bowl with a hand mixer. Take the chocolate /butter bowl out of the water pot (away from the heat) and add egg mix gradually to it with the hand mixer so it does not cook 9 th chocolate mix is warm). Add splenda a little at a time using hand mixer. Keep mixing until smooth. Add baking soda and keep mixing. Then add gradually the dry almond/flax/coconut mix. Mix thoroughly. Pour into a rectangular cake tin.

Put in a preheated oven at 350 for approx half hour. Aftre 30 minutes test to see if it is cooked and bake for longer if needed.

Place a cup of frozen raspberries in a bowl and allow them to defrost.

Once the cake is cooked spread raspberries and raspberrie juice on the top of the cake.

wip some heavy wipping cream with a few sprinkles of stevia. Spread the whipped cream/stevia on the top just before serving.

This cake makes 15 serving at 430 calories and 8 carbs a piece. 375 cals and 7.5 carbs without the wipped cream.

Looks good. Liquid splenda would drop the carb count as well.
