Question allergic to soy...

Hi all,
I've been doing the Atkins thing for about 6 weeks and have had some visible success. I did have to redo induction after I had a bad day and succumbed to the lure of a fluffernutter and chocolate chip cookies, but it didn't set me back much. I had food allergy testing done several years ago and turned out to be allergic to soy - not severely so, but I've found that eating more than small quantities of my "allergy foods" causes stomach distress as well as increases in my arthritis activity (I have rheumatoid). My question is, what other kinds of flours are there that are lower in carbs than generic white flour? I need to have something besides eggs for breakfast - I don't always have time to cook eggs and like to prepare muffins, pancakes, etc... ahead. Also, is egg white protein a good substitute for soy protein in recipes? Any suggestions? Thanks!

Try plain whey protein powder instead of soy and have a look through the breakfast ideas in the Low Carb Kitchen Forum.
