Unhappy Cooking with Splenda

Hi Everyone,

I followed a recipe that I found on this site which called for Splenda to be 'melted' in the microwave with butter.

WELL, not only did the Splenda not melt, it turned into really sticky, solid lumps of goo!

Has anyone else had success with 'melting' Splenda?

Wow, Joypod,

I'm sorry for your misfortune, especially since splenda is so darn expensive, I'm sorry to say I have never melted splenda before but that's because it usaually will do it, itself.

With that I mean, when for instance I make myself a Hot cup of Herbal Tea, put my splenda in and it fizzles out and disappears. Do you think you can put the recipe up so we could see. Maybe there's another way around it, like heating the butter first and then mixing in the splenda after, while it's hot.

Hi Crystall,

Yeah, I ended up working out that I didn't need to put the Splenda in with the butter and melt them both at the same time.

I just melted the butter and THEN added the Splenda and that worked a treat.

Here's what the recipie said:

Peanut Butter Cups
1 stick unsalted butter (I use salted!)
1 oz unsweetened chocolate
1/3 c Splenda
1 T heavy cream
4 T peanut butter
chopped walnuts (I don't use these)

Melt butter, chocolate, and Splenda in the microwave. Stir in cream and peanut butter. Line 10 (or in my case 6) muffin tins with cupcake papers. Place nuts in the bottom of each tin. Divide chocolate mixture between the tins. Freeze until firm. These need to be stored in the freezer because they melt quick. You can eat them right out of the freezer.


I didn't get past the melting bit at the beginning before I gave up! Pity because it sounded like quite a nice recipie.

Fancy putting a 'stick' of butter here!!! Joypod tsk! tsk!

I believe that's a quater of half a pound
Too confusing for me!!

Thats one eigth of a pound - if a pound is 16oz - is tha 2oz - about 60g ????

Hang on - I've edited - found this:

Butter

Each 1/4 pound stick of margarine or butter measures 1/2 cup or 8 tablespoons. In the United States, the wrapping usually has tablespoons and teaspoons clearly marked. One stick usually equals 1/2 cup. If it has not been packed that way, pack margarine or butter into measuring spoon or measuring cup.

BUT YOU GOTTA REMEMBER THEIR TABLESPOON IS DIFFERENT TO OURS.
