Part of a way of life is sometimes ending up in places/situations where carbs are all that is available. So part of the way of life is eating them rather than starving, knowing you'll have the water weight gain, and getting right back onto where you were when you slipped off. At other times, you may plan to take a meal off--a birthday, a holiday--and you'll do the same thing (if in maintenance, you may well take two-three days afterwards to cut back on carbs, but you don't need to go carb-free ever.) Every day, eat your green veggies, no matter what.
I'd add to what gwilson said. Not only is it like you have an allergy, from your symptoms, I'd guess you actually do have a wheat sensitivity (or allergy). It's a reasonable guess, at least, and you certainly have my permission to tell people this--and mention that you're suspicious about all other gluten-containing grains, as well. I don't think it's rude at all to tell anyone who may cook for you that you've changed the way you eat.
You've done great so far--nice weight and inches lost--and I'm sure you'll continue to do well in the future!
