Default Subtracting fiber/Enquiring minds...

Good Morning!

As usual, I have questions!

So what is the real scoop on the subtraction of fiber? I keep hearing bits and pieces here and there.
Does this apply across the board? Can you subtract the fiber in macadamia nuts as well as green beans? (hope so!) Will someone explain this phenomenon fully? Thanks so much!

I've read the dessert recipes in the back of DANDR. Some of them call for raw eggs (ice cream recipes, etc.) Have I missed out on some information ? I was under the impression we shouldn't eat raw eggs because of disease. Is this no longer an issue? I don't know if I could eat them even if there was no risk! But Ice cream sounds good!

Thanks for any clarification you can offer.

Default fiber

You can, and many do, subtract fiber from your carb count to get what PP refers to as your ECC (Effective Carbohydrate Count). This can be done because fiber is a carbohydrate that is not digestible by our bodies. It goes right through you, is not digested, causes no insulin rise.

Not sure about the eggs issue, though.

The disease from eggs comes from the shell...not the actual egg. That is why we are told never to eat a cracked egg.
