Yes, the shirataki noodles are made of konnyaku. That root has practically no carbs at all. Classic Japanese diet food. They make other things from konnyaku too, not just noodles.

I'll find my bookmarked link about them and post soon.

Lucky you if you have those noodles nearby.

If you happen to live close to an Asian Foodmarket, they might be found there as well. It's THE most fantastic noodle replacement there is.

(Konnyaku/shirataki has been discussed on this forum before, BTW, but it has been a while since.)

Asian markets and through the net (see the links I posted above.) Much cheaper in Asian markets though, but more rare as well.

Konnyaku/shirataki is a bit slippery (but with a good chewing resistance) and has no taste of its own, but blends well into any dish. When I'm lucky to get some (the one I get is called "fake lotus" and is shaped into small round slices) I mix it with a little soy sauce, garlic oil and eat them as mushrooms.

Oh, and don't mix them up with other white noodles (such as mung bean or rice noodles). Shirataki or any other konnyaku product always comes readymade, packed in water.

I buy my at the grocery store. It's in the refrigerator with the Tofu.

I've never had a problem finding them in any Japanese grocery store I walk into...
Not as common as other asian markets in Toronto, but they're around.

I bought some mung noodles. The bag said 4.7 carbs per serving. I looked them up on the internet and I think they meant to say 47 carbs per 2 oz serving. Does that sound correct? I did not eat more than 1 bite because they taste like pure starch to me. They were too good.They are also called bean thread.

I think mung noodles are very rich in carbs. Don't have the exact figures now, but I checked them up a long time ago and realised they were a nono. Unfortunately.
