You can make quite reasonable dishes with TVP (textured vegitable protein). I used to be a veggie, and used it in nut roasts (which you can still make...but without the breadcrumbs) and mixed with chopped onion and mushrooms to make vegiburgers.
Soya flour is also useful. You can make quite good pancakes with it.
There are a whole range of soups you could try - borshch, shchi, and many chinese ones with dropped egg in them.
